Our fish broth bone is made from our trout carcasses after we've filleted them. We try to be as zero-waste as possible. Carrots, celery, leeks, thyme, bay leaf, peppercorns, coriander seeds, and salt are added to give it a rich flavour. Our stock is a low-sodium product.
FYI:
Trout is a fatty fish, filled with omega-3, one of the healthier fats, so the stock does have a layer of fat but that should not be a cause for concern.
The bones, skin, and fin of the fish have a high collagen content so the stock may also has a jelly-like consistency when defrosted. It is normal and will become pure liquid when heating up.
